Today is Macaroni and Cheese Day. Unofficially. Probably. I can't be arsed to check. But for all of you who find yourselves sadly without Mac 'n' Cheese today, here's the recipe I made:

8 oz. Uncooked Elbow Macaroni

2 cups Sharp Cheddar Cheese, shredded

1/2 cup Parmesan Cheese, grated

2 cups Milk

1/2 cup Sour Cream

2 T. Butter

2 T. Flour

Bread Crumbs

Paprika

Freshly Ground Black Pepper

1. Cook the macaroni according to the package directions. Drain and set aside.

2. In a medium non-stick saucepan, melt butter over medium heat. Stir in flour until no lumps remain. Add milk slowly, stirring constantly. Increase heat to medium-high and allow to thicken slightly. Add the cheddar cheese a little bit at a time, to be sure it all melts into the sauce. Do the same with the Parmesan. Add the sour cream when all the cheese is melted and stir until it's fully incorporated.

3. Spread the macaroni in a casserole dish and cover with the cheese sauce, stirring thoroughly. Sprinkle paprika and freshly ground black pepper over the top. Sprinkle toasty bread crumbs over the top. Bake for 30 minutes at 350 degrees Fahrenheit.

Be sure to let it cool for about 10 minutes before serving, because it gets deliciously and dangerously hot and bubbly.
