Vampires in books

So I have a question... If in a book, and this happens often, a vampire is hundreds if not centuries old... And in some cases some authors will allude to the fact that they look like what they are... Erik the Viking for example... But in other cases, they refer to how beautiful the vampire is now, by current standards of beauty.

So what was that vampire when they were turned? Standards of beauty have change drastically over the the last century, let alone longer. And if the vampire cannot change their overall appearance, were they just some random, below average Joe meandering the streets?
